You know those days when it's almost dinner time, you haven't planned anything for dinner, you are too tired/lazy to cook something amazing and at the same time you feel like something delicious, healthy and homemade?
I do! Quite often actually!
The other night I had plenty of food in my pantry but didn't know what to cook! I wanted something, different, easy and delicious (translation: I was lazy).
I checked my fridge, my pantry, asked my hubby what he felt like eating and we decided that we wanted salmon and broccoli.
Fine! We always have that. Pan fry the Salmon. Steam the broccoli. A bit of rice on the side and that's it right? NO! That's not what we wanted.
Then I finally had the great (already invented) idea of making a quiche! Yes, Salmon and Broccoli Quiche.

- Recipe -
As lazy as I can get I bought the pastry already made from the supermarket.
- Filling -
- 300gr steamed broccoli
- 3 eggs
- 1/2 cup of cooking cream
- 200gr smoked salmon
- salt and pepper
- 1/4 cup Parmesan
- Cook the pastry according the instructions on the package.
- Place broccoli in the tray.
- Put the Salmon on top.
- Mix the eggs, cream, salt and pepper well and place it onto the tray.
- Sprinkle Parmesan on top.
- Bake it for approximately 30 minutes on 180C.
